Novotel Hyderabad Airport is set to take food lovers on a flavorful journey through Gujarat’s Kathiyawadi cuisine with its exclusive food festival, ‘Swaad Kathiawaad Ka.’ Running from February 22 to March 2, the festival will feature an extensive buffet curated by guest chef Poonam Dedhia, bringing authentic flavors from the Kathiyawad region to Hyderabad.

Originating from Gujarat’s Saurashtra region, Kathiyawadi cuisine stands apart from the traditionally sweet flavors of Gujarati food. Known for its robust, spicy, and aromatic preparations, the cuisine hails from cities such as Porbandar, Bhavnagar, Jamnagar, Rajkot, and Junagadh. Dishes like Sev Tameta nu Shaak, a tangy tomato-based curry garnished with crispy gram flour noodles, and Ringna no Oroh, a smoky, mashed eggplant dish, are staple delicacies that reflect the region’s culinary heritage.

Chef Poonam Dedhia has meticulously crafted a menu that captures the essence of Kathiyawadi cuisine. Guests will get to indulge in live counters serving popular street foods like Surti Patties and Kutchi Dabeli, hearty main courses including Surti Undhiyu and Lasaniya Ringna-Bateta nu Shaak, and traditional bread selections like Bajri na Rotla and Phulka Rotli.
